These pretty Pastel Cupcakes for my Niece's 1st Birthday went down a storm with everyone!
It's my Niece's 1st birthday party tomorrow đ So I spent today baking these pretty pastel cupcakes for all the adults and children there đ I think they look extra pretty by putting the plain cupcake cases into the printed card cases from Poundland!
Ingredients you'll need for the cupcakes 125g melted butter 125g caster sugar 125g gluten free self raising flour (I used doves farm) 2 eggs 2-3 tbsp milk Drops of vanilla extract .
Simple Method
1 Preheat oven to 190°C 2 Beat all ingredients together in a bowl with an electric whisk (or a manual whisk if you're feeling strong đŞđź)

Method 1 Beat together the butter, vanilla and 2 tbsp of the milk with an electric whisk. 2 Once whipped up to a fluffy texture add half of the icing sugar and whisk again. 3 Once mixed in, add the second half and another tbsp of milk if required.

This is a super simple recipe and the effect is lovely! I especially think the blue and pink go beautifully together.
